First step, get everything together. For the pancake recipe, you'll need 1 egg, and bowl to seperate the white into. 1 cup flour 1/4 cup flour, seperate from above 1/2 tsp salt 1/2 tsp baking soda 2: 1/2 cup milk Oil/butter for the pan. and something to stir it together, I use the rice scoop which baffles my mother why.

For pancakes, Combine the salt, baking soda, flour and the first 1/2 cup of milk. Stir it well and try to get out the flour lumps. Crack and seperate your egg, seperating the white into a glass. You only need the yolk for your batter. Add the yolk to the mix, then add the second 1/2 cup of milk, and the remainder of the 1/4 flour. Stir it all well and try to get the lumps out of it. For a fluffy tempura batter, combine salt, 1 cup flour, 1 cup of milk and 1 whole egg. Stir well and it will look rather runny, but let it chill in the fridge at least one hour, preferably overnight, and it will be perfect. For a lazy-crack crepe, leave out the 1/4 cup flour and it will spread rather well in the pan, add sugar if want.

Heat you frying pan to the temperature your comfortable with. You might want to disable your smokedetector, mine will go off the moment my frying pan hits top temperature. The batter volume usually makes enough for three people.

Alternatively, if you can actually make meringe, use the put asside egg white and make a meringe. For one egg white, I find 3 tbsp of sugar will be quite enough. And serve with either pancakes or the crepes. Unfortunately, mine fell flat today, and my sister was fed up with me setting off the smokedector to let me finish. But this is also a good base start to a perfect little mini angle food cake. Combine the salt, baking soda, 1 cup flour, 1 cup milk, 1 egg yolk and 1/2 tsp of vanila for flavour and 1/2 tbsp of oil. Make a mini meringe from the one egg white with just 3 tbsp of sugar. And then combine the two, just by folding, or slowly stiring it in. The mixture will be sticky, runny and a milky cream looking color. Pour it into a mini bundt pan or a small cake pan that has -high- sides, because this -will- expand. It's also a very quick cooking cake. Cook at your average cake temperature in your oven, but at this size, it won't take longer than half an hour.
