Recipe Description

You will need: • A small jar of peanut butter - 8oz / 227g • Sugar • An egg • Sea salt • Chocolate covered caramel I like to use chunky peanut butter for extra nuttiness, but smooth would work too. I used a large bar of Galaxy caramel, but any chocolate covered caramel will do - either a bar that can be broken into chunks, or individual pieces.

This cookie dough is so simple - just three ingredients, and no fiddly measuring or weighing! First, empty the jar of peanut butter into a mixing bowl.

Next, refill the jar with sugar and add to the bowl.

Then add the egg.

Mix the ingredients together until they form a nice firm even dough. This should only take a minute or so.

Now we're going to roll the dough out flat. You might find this stage easier if you chill the dough for half an hour first to make sure its nice and firm rather than soft and sticky. Place the dough on a large sheet of plastic wrap and roll it out until its nice and thin - around an 1/8 of an inch - and roughly rectangular in shape.

Add the pieces of chocolate covered caramel to one half of the dough only, evenly spaced - each one will form the centre of a cookie.

Add a good pinch of salt on top of each caramel piece. Use the best sea salt you can find, and don't be afraid to add plenty - salty caramel is delicious!

Carefully lift up the other free side of the dough using the plastic wrap, and fold it over the caramel pieces. Leaving the wrap in place, gently press the dough down around the pieces to seal them into parcels. Take a knife and cut the dough into squares around these parcels to create little pillows - like ravioli.

Carefully transfer your parcels to a tray lined with baking parchment. Place in a oven pre-heated to 180°C / 350°F / Gas Mark 4. Bake for around 10 minutes, until they start to turn a tasty-looking golden brown.
