Ingredients: (makes 12 rolls)1 cup warm water2 tablespoons yeast ⅓ cup avocado oil ¼ cup sugar 1 egg yolk 3 cups all-purpose flour ½ cup almond meal ½ teaspoon salt
Preheat oven to 400 degrees. Grease a 9x13 baking dish.
Mix together the warm water, yeast, oil, and sugar in a large bowl of a stand mixer. Let sit for 15 minutes to proof the yeast, and let it bubble upwards.
Add 2 cups of flour, almond meal, egg yolk, and salt to the yeast mixture, and stir in with the hook attachment on the mixer.
Add in the remaining 1 cup of flour into the mixer, gradually, while kneading on medium speed. Add until dough looks smooth, and doesn’t need anymore flour.
Separate the dough into 12 smaller balls of dough. (And easy way to think about it: Break it into half, break each half into 2 parts, then break each piece into thirds.)
Place these balls of dough evenly on the greased 9x13 baking dish.Bake in oven for 10+ minutes, or until the tops are completely golden brown.
Take out of oven and let cool before consuming.
