Preheat the oven to 375 degrees f. Mix the flour, baking soda, cream of tartar and 1 tsp of cinnamon in a small bowl.
In a large mixer, combine the butter and 1 cup of the sugar. Slowly whisk in the eggs and vanilla. The resulting mixture will be thin and light peach.
Put the blender on a low speed and scoop in the flour mixture. Keep the blender going throughout and add the flour about 1/2 cup at a time. When finished, the dough should be thick and soft.
Fill as bowl with the remaining cinnamon and sugar. Roll the dough into small balls and roll in the cinnamon/sugar mixture. Put the balls on a cookie sheet and press down on them with the bottom of a glass. Bake for 10-11 minutes. Makes 36-48 cookies, depending on the size of the dough balls. Enjoy!
